Origin and characteristics
Our protagonist is a plant whose scientific name is Cyperus esculentus which is popularly known as hazelnut sedge or tigernut plant. It reaches a height of 40-50cm, with herbaceous, linear, green stems. The leaves are basal and entire, up to 35cm long. Its flowers are grouped in spike-shaped inflorescences, and are yellowish in color. The fruit is trigone, ellipsoidal, and measures 1,1-1,6mm long by 0,3-0,6mm wide.
We can find it in southern Europe and western Africa, although it lives well in any area where the climate is temperate-mild and warm.
What are their cares?

- Earth:
- Pot: universal growing substrate.
- Garden: it is indifferent as long as it has good drainage.
- Irrigation: frequent, it is necessary to avoid that the earth dries up.
- Subscriber: in spring and summer it must be paid with organic fertilizers, once a month.
- Planting or transplanting time: in spring, when the risk of frost has passed.
- Multiplication: by division in spring.
- Harvest of the tubers: in winter.
- Rusticity: resistant up to -3ºC.

The tigernut plant is used as ornamentalboth as a garden plant and as a pot plant, but also for the preparation of tiger nut horchata, a typical drink from Valencia (Spain).
