Pepper plants are very productive: once they start, they will be producing lots of fruit for a few weeks. Sure, the problem is: what to do with so many? And it is sad that they spoil, right? But do not worry!

In order to preserve the green peppers, you must follow this step by step:

Prepare the peppers

As soon as you harvest them, you should clean them carefully with warm or cold water. It is important that you remove all the dirt that has stuck to them with your fingers. Do not use a brush or anything similar as they could damage the skin. Dry them well with absorbent paper; and then cut them into pieces and remove the seeds.

Skim them if you plan to cook them after defrosting.

If after defrosting them you plan to cook them, the ideal would be to blanch them. To do this, you must fill a pot with water and bring it to a boil. Next, prepare a large container of ice water. Now, add the peppers to the boiling water and leave them for 2-3 minutes; after that time, transfer them to the frozen water also for 2-3 minutes.

The next step is to transfer them to a colander and let them drain until they are dry, after which they will be spread on absorbent paper.

Freeze them

Now is the time to spread the peppers in a baking dish so that they are in a single layer and do not touch each other. Then, it will only be left to put them in the freezer for a couple of hours. Then put them in plastic freezer bags or containers and put them back in the freezer.
